Allergens Legislation 2014
More and more people develop an intolerance or allergy to one or more allergens. For that reason it is, as you may know, from December 13, 2014 required to provide information about the 14 legal allergens in your food to your guests. The requirements are:
This 14 allergens must be listed on the label of a product when one or more of these substances are used. For loose counter sales the seller is obliged to appoint the allergens present.
This 14 allergens must be listed if they are used in the preparation of foods. This in any form.
The substances shall be indicated with clear reference to the name of the ingredient on the label. So 'Milk' when whey was used. This is not necessary if the name of the product clearly refers to the substance as a package of pasteurized milk.
